Wild Meat

Wild bull burgers with harissa.  A. shot a feral bull–no small feat–last year and gave me a beautiful package of ground meat to freeze with a promise that it made good burgers. I had Dad take over. With a little extra olive oil, the very lean bull yielded a wonderful meatiness and, over a hot fire, developed a lacquer of red like a Chinese roast duck.
